Love Letters

Love letters or Kueh Kapit(in Malay), is a very common type of cookies which you will get to see during Chinese New Year visitings.

In the olden days, love letters are cooked over charcoal stove; the egg and flour mixture are poured into a metal mould which are then peeled from it and quickly rolled and shape, the minute they are cooked.

These days, love letters electric maker became popular which ease the pain of having to squat in front of the charcoal stove the entire day of making them. However, the slight disadvantage of using it is the uneven tones and you gets rolls which are also thicker than made with traditional method. Nevertheless, we managed to make quite a few bottles of our satisfactory love letters with the electric maker! ^o*





Cereal Cookies

Both Christmas and New Year celebrations were barely over... now; the Chinese Lunar New Year is approaching us so quickly!!

The "production" of Chinese New Year cookies started again! This year, sis wanted to make something simple as she had a long holiday just before Christmas. Both she and I are so lazy to bake anything more than last years' "productions".

Her oven heated up last Friday.... the production output were many bottles of cereal cookies sufficient for her distribution to relatives! Sis declared Saturday as rest day for our own CNY preparations ... ... and baking continues on Sunday for 'love letters'.

Chinese New Year Cookies - Kueh Bangket

Today is our second day of Chinese New Year cookies baking and will be the last, before we start our cake baking next week.

Sister mentioned that the sugee cookies which we baked yesterday were not sufficient for her distributions to her friends and relatives; so we baked second batch of sugee cookies and lastly - the Kueh Bangket. This is our first trial and little did we know the process was a little tedious ... anyway, we finally finished baking them. ^o*

Chinese New Year Cookies - Sugee Cookies

My sis rang early morning to go over her place to bake cookies for Chinese New Year! Therefore, I went over and stayed for hours... ... the output of our joint efforts are bottles of sugee cookies!

Tomorrow will be another round of baking of cookies.... (@.@)

Melting Moments

Husband said I should bake some cookies instead of baking cakes; since his birthday is just three weeks away, I decided to try bake for him some almond cookies! This is my first trial of melting moments which I got the recipe from here. And as what it is being called, it melted in the mouth!! ^o^

Shapes are a little 'out' as I piped them instead of making round dough!

Ingredients

227g unsalted butter, room temperature
175g all-purpose flour
90g cornstarch (corn flour)
¼ tsp salt 35g icing sugar
1 – 1½ tsp almond essence
almond bits or flakes for decoration

Method
  1. Sieves flour, cornstarch and salt together. Set aside.
  2. Use electric mixer, cream the butter and sugar until light and fluffy.
  3. Beat in the almond essence.
  4. Add the flour mixture and beat until incorporated. Do not over mix.
  5. Cover and refrigerate the dough for at least one hour or until dough is firm.
  6. Floured your hands with all purpose flour and roll dough into small balls and place on a lined tray.
  7. Flatten the dough slightly with a floured fork.
  8. Decorate the dough by added some almond bits or flakes on top.
  9. Bake at 190C for about 10 minutes or until the edges start to brown.
  10. Cool and store in a airtight container.
